A new experiment in the same vein as our Sweetheart. This beverage is a blend of one barrel of Sweetheart, fermented and aged for one year on red wine lees, with one barrel of our Piquette. It was refermented in the bottle to add bubbles.

Vinification: The cider was pressed directly into a barrel containing merlot lees. After 1 year in barrel, we blended it with a barrel of Merlot Piquette. Bottled with organic wildflower honey to referment in bottle.
Notes: More red-fruited and textured than Sweetheart, still with great acidity.
